THE PINK MISTLETOE

This cocktail, while light & refreshing, is filled with delicate festive flavors like Elderflower, Lavender and Hibiscus! The combination, with the additional brightness of lemon, is something that is the perfect beginning for any holiday soirée. If you’d like to make it even more Christmasy, garnish it with some glittering edible sugar!

Aquafaba is something you may not have heard of but, chances are, you have it in your kitchen! It is basically the juice that accompanies the Garbanzo beans in their can! It might sound strange for a cocktail, but it is essentially flavorless and acts almost identically to egg whites (but vegan!) giving your cocktails that frothy deliciousness. We swear by it at TomTom!

INGREDIENTS

2 oz Vodka

½ oz St. Germain Elderflower Liqueur

½ oz Fresh lemon juice

½ oz Hibiscus Syrup (Recipe Below)

5 dashes Lavender Water

¾ oz Aquafaba  

Ice

PREPARATION

1.     Add the aquafaba to a shaker and shake it vigorously with nothing else in it. This activates the frothiness!

2.     Add the vodka, St. Germain, fresh lemon juice, hibiscus syrup and lavender water to a shaker.

3.     Fill the shaker ¾ full of ice.

4.     Shake vigorously for at least 30 seconds.

5.     Strain into a martini glass.

6.     Enjoy!

Hibiscus Syrup

Making a flavored syrup is very simple! Regular Simple Syrup is just equal parts Sugar & Water, brought up to just before boiling and then reduced to a low simmer for 5-10 minutes. To make a flavored one, simply add whatever herbs and spices you’d like. Then let cool.

 For Hibiscus Simple Syrup, combine either equal parts sugar, water, and dried hibiscus flowers and follow the instructions above, or combine equal parts Water with half the amount of Sugar and half the amount of Hibiscus Sugar Crystals!
